About the Project
The main objective of this project was to structure the institutional food market so that local food products could be introduced into public school canteens, helping to reduce the ecological footprint by promoting short supply chains while at the same time promoting healthier and more sustainable eating from an early age.
The main actions carried out by Ruris were:
- Development of sustainable food systems and structuring of short supply chains;
- Preparation of an assessment on the reorganisation of local markets (short marketing chains);
- Evaluation of the institutional food market;
- Development of an overall strategy for the public procurement of food.
